Best Ever Lemon Squares

When I’m planning a special holiday meal, the first thing I do is phone my kids and ask them what they want for dessert. I’m sweet like that. Without fail, 4 out of the 5 will ask for Best Ever Lemon Squares.  

I’m always secretly pleased because they’re so easy to make. The odd kid out always asks for something that takes forever to make. Is he trying to torment me?

Lemon is one of my favorite flavors. Add cream cheese to the mix and I’m all in. Years ago I would make my lemon squares totally from scratch and they were pretty good. Once I tasted Best Ever Lemon Squares, I never make them the old fashioned way again. Why settle for good when you can have great AND easy?

Simple Ingredients For Lemon Squares

For this recipe, you’ll need these ingredients:

  • Lemon Cake Mix
  • Butter
  • Eggs
  • Powdered Sugar
  • Cream Cheese
  • Vanilla Extract
  • Dash of Salt

The bottom layer is made with the lemon cake mix, butter, and an egg. The top layer consists of eggs, cream cheese, and powdered sugar. This dessert bakes up a beautiful golden brown and the taste is amazing.

Dressed Up Lemon Squares

I decided to dress-up my lemon squares for our special Easter meal. We all want to look pretty on Easter, right? I grabbed my bunny rabbit silhouette that I printed, cut out and used to add bunnies to my Easter table runner.

Once the lemon squares were cooled, I positioned the rabbit in the middle. I used my powdered sugar sifter thingy and sifted sugar over the top.  Then I carefully removed the bunny.  Isn’t it cute?

Of course, you don’t have to add the rabbit silhouette or the powdered sugar. I only do that to celebrate Easter.

Best Ever Lemon Squares

These are the best lemon squares and are so easy to make. These squares have just the right amount of lemon flavor.

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 1 lemon cake mix
  • 1/2 cup butter, melted
  • 3 eggs
  • 1 box (16 oz.) powdered sugar
  • 1 (8 oz) cream cheese, softened
  • 1 tsp. vanilla extract
  • Dash of salt

Instructions

  1. Mix cake mix, butter and 1 egg together. Press into bottom on an ungreased 9" x 13" baking pan. Set aside.
  2. Cream remaining 2 eggs and cream cheese until combined. Add powdered sugar, salt and vanilla. Mix until combined.
  3. Spread cream cheese mixture over cake mix layer.
  4. Bake at 350º for 40-45 minutes (lightly browned)
  5. Cool slightly before cutting into squares.
